Nothing Beats Homemade Tortillas

Regular loaf bread is highly overrated. So many options of flat breads or tortillas are available that are so much better. Wrapping up some leftovers, creasing the ends and tossing it in the oven for a couple of minutes,  put in some fresh veggies, maybe an egg and some cheese…a little peanut butter and honey. Options are endless and oh, so many more than standard bread.

Some folks who live close run Teresa’s Mosaic Cafe and for a few bucks you can walk out the door with a dozen fresh tortillas in about 5 minutes. Winter comfort food for sure. Picked some up for some friends who’ve been extra good to us of late; a small symbol of thanks; let’s hope they travel well. The tortilla’s, not the friends.

Fewer than 48 hours now; missed two calls from the nurses looking for pre-op info. Left a return message late this afternoon but with my Tuesday schedule it’ll be a tough call to take most of the day.  It seems counter-productive to want a procedure; but I know the outcome can be highly favorable if it’s completed; still concerned about advanced arthritis in the joint taking precedence over the procedure. Wish I had some stats or reference points on that. Twenty-seven years ago to the day I first had the knee scoped; I remember because it was Valentine’s Day and the hospital was all decked out.
